Ingredients
1/2 cup sourdough discard
1 cup all-purpose flour
1 ripe banana (optional)
1/4 cup sugar
1/2 tsp baking soda
1/2 tsp cinnamon
1/4 tsp salt
1 egg
1/4 cup milk
2 tbsp melted butter
Instructions
1. Preheat oven to 375°F and grease a muffin tin.
2. In a bowl, whisk sourdough discard, banana, sugar, egg, milk, and butter.
3. In a second bowl, combine flour, baking soda, cinnamon, and salt.
4. Fold dry ingredients into wet mix until just combined.
5. Scoop into muffin cups, filling 3/4 full.
6. Bake for 16–18 minutes or until golden.
Notes
For savory versions, omit banana and sugar. Add shredded cheese or herbs instead.
Best served warm. Store leftovers in an airtight container.
